What does 2000 calories look like?

Healthy Breakfast Ideas-Scrambled Egg "Muffins"

One of my favorite healthy breakfast ideas on the go is Scrambled Egg "Muffins"
They are super easy to make and packed with veggies.


Minutes to Prepare: 10
Minutes to Cook: 25-30
Number of Servings: 12

What you need:
12 eggs
lots of chopped vegetables
muffin tin

Preheat oven to 350 degrees

Directions:
(1) Beat 12 eggs
(2) Chop up your favorite vegetables (approximately 1 cm. chunks).  I love to use red peppers, broccoli, and spinach.  But use whatever you like.
(3) Grease muffin tin
(4) Fill half of each muffin slot with chopped vegetables
(5) Fill the remainder of each muffin slot with beaten eggs
(6) Bake for 25-30 minutes at 350 degrees (test doneness with a fork to make sure eggs have cooked thoroughly)
(7) Enjoy!  I like to make these for the week.  I just wait for them to cool and then put them in mini-to-gos for the week.

 — Bay Path College is asking the community to come together in an effort to get healthy.
Bay Path's Health and Wellness Department is launching "Ways to Wellness: 28 Days to a Healthier You." The online program starts on March 25.
The program is developed around busy lives and requires five minutes a day to participate. There will be a one minute daily video and helpful hints.
“Our goal is to have people complete this program and have at least three new life-changing habits,” said Katie, Jones, life skills program director. “We know that time is often an issue, but the irony of this program is that just by investing five minutes, you may learn ways to have more or better use of time.”
The Health and Wellness Department worked closely with health coach and wellness consultant Michelle Cove, M.A., of Sustainable Wellness, to create the program.
Cove said stress and poor nutrition combined with a lack of exercise takes a toll on the body.
Cove will be giving people tips every day for 28 days that will help them get healthier.
The videos include healthy, sustainable habits that will make a difference today and for many years to come, Cove said.

Holyoke St. Patrick's Day Road Race

Congratulations to everyone in the Bay Path College community who ran in the Holyoke's 28th St. Patrick's Day 10K Road Race on Saturday March 16th!

Not only did these individuals run 6.2 miles, but they also completed what is considered by many in the running world to be one of the most challenging road race courses due to its steep hills.
(I am still trying to understand how you can run a 6.2 mile loop all uphill...)
